| White Cake Balls |
Ingredients:
- 1 cup butter (softened)
- 2 cups powdered sugar, divided (1/2 cup for dough, 1 1/2 cups for coating)
- 2 teaspoons vanilla extract
- 1/2 teaspoon ground nutmeg
- pinch of salt
- 2 cups flour
- 2 cups finely chopped pecans
Directions:
1. Preheat the oven to 350 F.
2. With an electric mixer in large mixing bowl beat butter until light and fluffy. Add 1/2 cup of powdered sugar, vanilla, nutmeg and salt and beat until well blended.
3. Stir in flour and pecans until well blended.
4. Shape into 1-inch balls. Place balls about 1-inch apart on un-greased baking sheets.
5. Bake for 15 minutes. Set aside to cool for 3 minutes. Roll cookies in remaining powdered sugar. Place cookies on wire rack to cool. When completely cool, roll again in powdered sugar.
