Dark Chocolate Cake

Dark Chocolate Cake

Ingredients:
  • 2 cups sugar
  • 1 3/4 cups flour
  • 3/4 cup dark cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

Frosting:
  • 1/2 cup butter
  • 2/3 cup dark cocoa powder
  • 3 cups powdered sugar
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
Directions:

1. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in a large bowl.

2. Add eggs, milk, oil and vanilla and beat on medium speed for 2 minutes.

3. Stir in boiling water. Pour batter into two greased 9-inch round baking pans. Bake at 350F (180C) for 30 minutes or until toothpick inserted in center comes out clean.

4. Cool 10 minutes, remove from pans to wire racks.

5. To make frosting melt the butter and stir in cocoa. Alternately add powdered sugar, milk and vanilla, beating to spreading consistency. Add small amount of milk, if needed. Spread over the cake.
