| Coconut Cake Bars |
Ingredients:
- 3 eggs
- 125 g caster sugar
- 1 teaspoon vanilla extract
- 125 g flour
- 150 g Nutella
For the frosting:
- 15 g butter
- 250 g icing sugar
- 6 tablespoons milk
- 200 g desiccated coconut
- 100 g dark chocolate
Directions:
1. Heat the oven to 180C. Grease and base-line a 20 cm loose-based square cake tin.
2. In a large bowl, whisk together the eggs, sugar and vanilla. Continue to whisk the mixture until it's pale and thick consistency.
3. Using a spatula, fold the flour into the egg mixture using a cut and fold motion to keep the air in. Pour the mixture into the cake tin and bake for 25 minutes until springy.
4. Leave to cool in the tin, then turn out on to a rack to cool completely.
5. Melt the frosting ingredients (except coconut) Gently melt chocolate and the butter together over a pan of simmering water, stir and leave to cool.
6. In a separate bowl, whisk the sugar and eggs until pale and thick. Beat in the melted chocolate.
7. Cut cake in half horizontally. Spread one half with Nutella and sandwich together. Cut into 16 squares. Dip each one in chocolate icing, then dip each square into the coconut to coat. Leave on baking parchment until set.
