Wafers Cookies

Wafers Cookies, no-bake, cookies, chocolate desserts
Wafers Cookies

Ingredients:
  • 200 g packet of wafer sheets
Chocolate filling:
  • 400 g sweetened condensed milk
  • 250 g butter
  • 250 g chocolate
  • 110 g finely ground walnuts
  • 1 teaspoon vanilla extract
Lemon filling:
  • 4 egg yolks
  • 150 g white sugar
  • juice from 11/2 lemon
  • 1/2 tablespoon grated lemon rind
  • 150 g butter
  • 150 g icing sugar

Directions:

1. For chocolate filling mix all ingredients until smooth and creamy.

2. For the lemon filling mix together the butter, white sugar, lemon and egg yolks. Transfer to a pot and cook on stove stirring constantly until the mixture thickens. Remove from heat and stir until it cools.

3. In a small bowl combine butter with icing sugar until combined thoroughly.

4. Add the egg mixture to the butter/sugar mixture and combine.

5. To assemble: Spread 1/4 of the mixture evenly over the wafer sheet.
Lay another wafer sheet on top and repeat process until filling is used up. Ensure last wafer sheet placed on filling is pattern side up. Place slice on a chopping board, and another on top of the wafer slice. Refrigerate overnight. Cut into squares or diamond shapes and serve.
