Cherry Pie

Ingredients:
  • 500 g cherries
  • 1 1/2 cup flour
  • 1 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 150 g sugar
  • 1/2 cup melted butter
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • zest of 1 lemon
Directions:

1. Preheat the oven to 205C. Butter and flour a 9' pan. Cut the cherries in half so you can pit them.

2. Whisk the flour, baking powder and salt until combined.

3. Beat the eggs and sugar about 3-5 minutes. Add the melted butter, zest, vanilla, milk and beat until well combined. Add the flour mixture and stir to be combined.

4. Gently fold the cherries into the batter and leave 15 halves aside. Pour the batter in the pan and bake for 15 minutes. Remove the pan from the oven and arrange the remaining cherries on top of the cake and return to the oven to bake for 20 more minutes.
