| Delicious Coconut Cake |
Ingredients:
- 125 g softened butter
- 1/2 teaspoon coconut essence
- 1 cup castor sugar
- 2 large eggs
- 40 g dessicated coconut
- 1 1/2 cups flour
- 250 g sour cream
- 2 cups icing sugar
- 110 g dessicated coconut
- 2 eggs whites
- 1 tablespoon water
Directions:
1. Preheat oven to 180 C. Grease cake pan and line base wih baking paper.
2. Beat butter, essence and sugar in a small bowl with an electric mixer until well combined. Beat in eggs, one at time.
3. Stir in half the coconut and half the sifted flour, half the sour cream and half the milk, then add remaining coconut, flour, sour cream and milk. Stir until smooth.
4. Sprad the mixture into the pan. Bake for 50 minutes. Stand cake in pan for 10 minutes before turning onto wire rack, top-side up to cool.
5. For coconut ice frosting combine icing sugar with coconut, egg whites and water. Top cold cake with this frosting.
