| Banana Cake Roll |
Ingredients:
- 5 large eggs
- 5 tablespoons white sugar
- 5 tablespoons all-purpose flour
- 6 g (0,21oz) baking powder (half package)
- 6 whole banana's peeled
- 2 tablespoons cocoa powder
- 2 packages instant vanilla pudding mix
- 1/2 margarine
For the cake:
1. Combine eggs and sugar and beat it with electric mixer until thickened. In a large bowl whisk together flour, baking powder and cocoa powder. Stir in flour mixture into eggs mixture.
2. Spread batter evenly into prepared pan, easing it carefully to the corners with a spatula.
3. Bake for 12-15 minutes. After that loosen cake from edges of pan, invert cake onto the prepared towel. Roll up cake in towel while hot.
Filling:
1. In a large bowl combine pudding mix and milk, stir well. Let it cool. Beat margarine into pudding mixture. Leave a little bit of mixture so you can spread it over cake.
2. When cake has cooled, unroll and spread with filling. Place the peeled banana's near edge of long side of roll and roll up again. (Be sure to use bananas that have absolutely no black or brown specks on them.) Wrap rolled cake in plastic wrap then refrigerate at least two hours. Use remaining filling to cover your cake.
