| Mosaic Cake |
Ingredients:
- 500 g petit beurre biscuits
- 1 cup sugar
- 1/2 cup cocoa
- 1 teaspoon vanilla extract
- 4 eggs
- 1 cup butter
- 80 g chocolate (bitter)
Directions:
1. Break all of your biscuits into small squares and set aside. Melt the butter and chocolate together in the microwave.
2. Whisk the sugar, vanilla and cocoa into the butter and chocolate and mix well. Whisk in the eggs and mix well until thickened.
3. In a large mixing bowl, combine the biscuits and the chocolate mixture.
4. Line your loaf pan with the plastic sheet. Fill the pan over the plastic and pack the mixture down as tightly as you can. Smooth the top, then close the edges of the plastic over the top.
5. Refrigerate overnight before serving.
