| Muffins Recipe |
Ingredients:
- 50 g cornflour
- 3 tablespoons cocoa
- 100 g brown sugar
- 225 ml cold water
- 75 g unsalted butter
- 125 g dark chocolate
- 75 ml sunflower oil
- 2 teaspoon vanilla extract
- 2 large eggs
- 125 g caster sugar
- 125 g plain flour
- 2 1/2 teaspoon baking powder
Directions:
1. Preheat the oven to 180 C. In a large saucepan, put the cornflour, cocoa, brown sugar and cold water. Whisk together over a medium heat until boiling. Remove from the heat and beat in the butter and chocolate until both have melted. Add the oil, vanilla and one of the eggs- beat until combined.
2. Add the remaining egg and the caster sugar and beat until the mixture is smooth.
3. In a mixing bowl, measure out the flour and baking powder and stir together. Sift this onto the custard and beat again until the flour is combined. Spoon into 12 paper muffin cases that have been put into a muffin pan and bake for 25 minutes.
