| Cacao Coconut Biscuit |
Ingredients:
- 1 cup all purpose flour
- 1 egg
- 1 cup shredded coconut
- 1/2 teaspoon bicarbonate of soda
- 1/2 cup oil
- 3/4 cup sugar
- 3 tablespoons cacao powder
Directions:
1. Preheat oven to 180°C
2. Mix the flour, soda and cacao powder into a bowl. Stir in coconut and sugar until well combined.
3. Mix in oil and egg. Mix until mixture comes together to form a crumbly dough.
4. Line a baking tray, divide the mixture into 12 generous sized balls spaced at least 7 cm apart on tray.
5. Bake for 10-18 minutes until the mixture is spread and cracks appear on the surface. Leave to set for 10 minutes.
