Quick Lemon Cake

Quick Lemon Cake

 Ingredients:
  • 7 eggs
  • 15 tablespoons sugar
  • 4 tablespoons cornstarch
  • 2 tablespoons all purpose flour
  • 1 tablespoon grits
  • 2 packages vanilla sugar
  • 800 ml milk
  • 100 ml water
  • 1 lemon 
  • 100 gr ground walnuts
Directions:

1. Combine 7 egg whites and 7 tablespoons of sugar. Stir in grits, flour and grated lemon rind.

2. Grease a cake pan with butter and sprinkle with ground walnuts. Fill the dough into the pan. Preheat the oven to 180 C and bake for 10 minutes. Lower the temperature to 150 C and bake for another 10 minutes.

3. Combine remaining egg yolks and 6 tablespoons of sugar. Add 200 ml of milk, cornstarch, flour and vanilla sugar.

4. In a small saucepan, heat the milk (600ml) until it's steaming. Stir in the egg mixture and cook until you get thick mixture. Leave it to cool. 

5. In a seperate bowl combine 100 ml of water and 2 tablespoons of sugar. Add fresh lemon juice and cook for 10 minutes. Remove from the heat and allow to cool. Sprinkle cake with lemon mixture, spread with the filling. Sprinkle the top with ground walnuts.
