Sacher Torte - Chocolate Cake

Ingredients:
  • 7 egg yolks
  • 150 g butter
  • 125 g sugar (icing)
  • 125 g sugar (crystal)
  • 200 g dark chocolate
  • 1 packet vanilla sugar
  • 7 egg whites
  • a pinch of salt
  • 150 g flour
  • 150 g apricot jam
  • whipped cream
- for the glaze:
  • 200 g dark chocolate coating
  • 180 ml water
  • 250 g sugar
Directions:

1. Melt the chocolate in microwave, or in a water bath. Meanwhile, mix the butter with the icing sugar and vanilla sugar. Stir in the egg yolks. Pre-heat the oven to 180 C.

2. Grease a cake pan with butter and sprinkle with flour.Whip up the egg whites with a pinch of salt, add the crystal sugar and beat to a stiff peak. Stir the melted chocolate into the paste with the egg yolks and fold in the whipped egg whites alternately with the flour. Fill the dough into the pan and bake for around 1 hour.

3. Leave the cake to cool off. Cut off the top of cake if it isn't smooth.

4. Divide the cake into two parts, cover the base with jam. Set the other half on top, and coat it with apricot jam.

5. Meanwhile, prepare the glaze. Bring sugar with a water to boil. Add the chocolate and cook over medium heat, stirring occasionally. Remove the glaze from the heat and allow to cool.

6. Pour the glaze over the cake and spread it out and smooth it over the surface. Leave the  cake to dry at room temperature.
